Let's get creative with Lemon Balm

and make a super healthy Iced Tea

Lemon Balm (Melissa officinalis) -a member of the mint family- is a gentle yet powerful nervine — it calms anxiety, supports sleep, and has antiviral properties, especially helpful for cold sores and general immune support.

Recipe

1. Add the chopped Lemon Balm to a bowl

2. Add hot (not boiling!) water + honey and stir

3. Cover the bowl and steep for at least 2 hours

4. Strain the leaves, pour the iced tea into a jug and store in the refrigerator to cool 

5. Serve with ice cubes and a slice of lemon to taste 

🐡   4 cups (1-1.5 dl) filtered water

🌿   1 cup (260 ml) chopped Lemon Balm leaves 

🍯   tbsp of raw honey
